Welcome to another year of highlighting the Harbourside Market’s traders of the month! There were just too many traders for us to choose from over our busy Christmas period, but now Trader of the Month is back, and with something to prove. This month we’re pleased to welcome Tom from Shred Fresh, talking all things pho.
What’s the idea behind Shred Fresh?
Growing up next to a Malay family, Asian food has always been close to my heart, as is healthy food. The two naturally merged and the idea to bring convenient, tasty and fresh food to people was cooked up.
Tell us about how you make your food — from supply to cooking.
All our ingredients are from Bristol suppliers. We change the menu throughout the year to keep things interesting but mainly because I can’t help but to mix things up. This also allows us to take advantage of seasonal produce.
Except for the noodles and soy sauce, you can be sure we’ve picked, chopped, cooked or blended our food from scratch.
Who are your local food heroes?
Bradley from Farro Bakery. The effort and passion he puts into his pastries and bread is nothing short of heroic, and you can taste it!
Another hero of mine is Lara Lindsay, a name I’m sure you’ll be hearing a lot of soon. Look out for her pop-ups and soon-to-be launching Dela restaurant. If you were’t at the latest feast in Harts Bakery you most definitely missed out!
Where do you see Shred Fresh in five years?
We’d love to be on the sharp edge of urban farming, helping to bring food that’s as fresh as possible to tables across Bristol.
What would your last meal be?
My mum’s apple crumble (watch this space).
